These Beef & Hidden Liver Meatballs pack a nutrient dense punch without the harsh flavor that turns so many people away from organ meats. Give em a try!

I know. Another recipe with liver in it.

But honestly, including nutrient dense organ meats like liver into your diet help your body in so many ways. Liver is packed with way more than your daily recommended amount of vitamin A, vitamin B2, vitamin B12, and copper, and contains a big punch of iron, too.

And if you chop it up into really really tiny pieces and mix it in with some grass-fed ground beef (code PK10), some spices, an egg, and some rice crumbs, you can hide all of the taste but keep all of the nutrition benefits.

And that’s really what matters, right?

You can make double batches of these Beef & Hidden Liver meatballs, too. That way you’ll always have something healthy and delicious on-hand for a quick meal prep or dinner!

I loved adding my meatballs on top of some Easy Roasted Potatoes and some microwaved frozen veggies. Just a dollop of salsa and a sprinkle of sea salt and you have mealtime down!

Ingredients

  • 1/2 lb grass-fed ground beef (I used Thousand Hills)
  • 1/2 lb beef liver chopped into tiny pieces
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/3 cup fresh chopped parsley
  • 1 large egg
  • 1/2 cup Trader Joe's Gluten-Free Rice Crumbs
  • 1 tsp sea salt
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Instructions

  1. Preheat your oven to 350 degrees and line a sheet pan with parchment paper.

  2. Combine all of the ingredients in a large bowl. Mix enough to incorporate all of the ingredients, but be sure not to do too much or the meat will toughen.

  3. Divide the meat into 1 inch balls.

  4. Bake for 28-30 minutes, until they're just cooked and slightly browned on top.
