These Easy Roasted Potatoes show up in my meal plan at least twice a month. Grab some spuds, take a look through your spice rack and make them your own!

I know that roasted potatoes may not be the most exciting recipe to ever exist, but stay with me here.

These Oven Roasted Potatoes are the perfect addition to almost any meal, and here’s why:

  • They’re super filling. Reach for some roasted potatoes and you’ll definitely be more satiated than if you stick your hand down a bag of potato chips.
  • They fit in almost every diet. Keto/low-carb aside, chances are you can eat some potatoes without any negative consequences. And if you have a nightshade intolerance, swap the russets for sweet potatoes or yams!
  • They’re really cheap. An entire 5 pound bag of organic russet potatoes costs under 5 dollars, and you’ll want to go organic with these since you’ll probably be eating some of the soil they’re grown in. 😉 Have you ever tried to eat 5 pounds of potatoes? It takes awhile!
  • They last forever. Well, not forever, but you know what I mean. If you buy one bag, it’ll probably last you at least two weeks.
  • They’re customizable. You can use whatever kinds of spices you want to keep things interesting. I recommend smoked paprika and cinnamon!
  • They take almost zero prep work. Just pop them in the oven while you’re doing laundry or cleaning or watching Netflix. They’ll be done before you know it!

Just be sure to set a timer, because you don’t want to burn the house down!

These Easy Roasted Potatoes would go perfect alongside my Easy Sausage & Kale Frittata or with my Pumpkin Sriracha Chicken Thighs. Actually, they’d go alongside just about anything, so feel free to get creative!

Easy Roasted Potatoes

These Easy Roasted Potatoes show up in my meal plan at least twice a month. Grab some spuds, take a look through your spice rack and make them your own!

Ingredients

  • 2 lbs organic russet potatoes washed & cubed
  • avocado oil spray
  • sea salt to taste
  • pepper to taste
  • smoked paprika to taste
  • ground mustard to taste
  • garlic powder to taste

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.

  2. Wash and cube your potatoes and place them on the sheet.

  3. Spray them with your oil of choice and then sprinkle on liberal amounts of sea salt, pepper, smoked paprika, ground mustard, and garlic powder. Potatoes need a ton of spice, so don't hold back!

  4. Toss the potatoes with your hands to make sure they're coated evenly.

  5. Bake for 40 minutes, mixing at the halfway point.

  6. Optional: Turn your oven to Broil for the last 5 minutes to really crisp them up!
