These are the World’s Most Flavorful Meatballs and you need to make a batch. Gluten-free, full of yummy spices, and ready in under an hour!

I can’t tell you how many times I’ve bitten into a meatball expecting a flavor explosion and been sorely, sorely disappointed.

I think that a lot of people are afraid to add a lot of spices to their meat. But I can’t really understand why. Ground beef and pork are a great empty canvas that you can paint with tons of flavor. Salt & pepper just don’t cut it.

And my favorite thing about this recipe? There aren’t any sugary breadcrumbs to be found. Most meatballs are packed full of panko, which is delicious, but not exactly the most nutritious. These babies hold together all on their own, so celiacs rejoice!

These really are the World’s Most Flavorful Meatballs. I know, because I used about half of my spice cabinet when making them.

They may not have as much added nutrition as my Beef & Hidden Liver Meatballs, but I still used grass-fed ground beef from Thousand Hills to give them a healthy edge. PS. This recipe makes a ton of meatballs, but they freeze super well! Just let them come to room temperature, put them into a freezer bag, and stash them in there. Pop ’em in the microwave to defrost in under 3 minutes when you need a quick & easy dish!

Ingredients

  • 1 lb grass-fed ground beef (I used Thousand Hills)
  • 1 lb ground pork sausage
  • 1 yellow onion diced
  • 1/4 cup fresh parsley chopped
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp ground allspice
  • 1/2 tsp cardamom
  • 1/2 tsp ground turmeric
  • 1/2 tsp smoked paprika
  • 1 large egg

Instructions

  1. Preheat your oven to 350 degrees F and line a baking sheet (or two) with parchment paper.

  2. Mix together your spice blend in a small bowl.

  3. Mix your beef, sausage, egg, parsley, onion, and spices together in a large bowl. You want everything to become incorporated, but be sure not to over mix! That'll lead to tough meatballs.

  4. Roll into ~2 Tbsp balls and place on the baking sheet. Repeat until mixture is finished. I ended up with around 3 dozen total, but it'll depend on the size of your meatballs.

  5. Place in the oven and bake for 28-30 minutes. Plate with some rice and collard greens and enjoy!
