Cauliflower steals the show in this gluten free, grain free, low carb side that’s sure to satisfy even the pickiest of eaters in 20 minutes or less.

Fun fact: I used to despise cauliflower.

My earliest memory of the stuff has to be back in high school where my friend Natasha (hi Tash!) would bring bags of it to lunch. Raw. Yuck.

But then again, these were the days when I was eating greasy slices of pepperoni pizza with a side of French fries for lunch. And having two cookies for dessert.

Wow. It’s amazing how you can eat when you’re young without suffering consequences!

Anyways, after discovering that cauliflower and I can be friends (as long as it’s cooked first), I became obsessed with the stuff. Seriously. I like it baked (this way is my favorite), fried, and dredged in any sauce imaginable. (If you’re looking for a good one, check out my Pumpkin Sriracha Sauce!)

But that’s not all. Once you start playing around with the shape, it’s a whole new game. Enter: Garlic Parmesan Mashed Cauliflower.

It has all the flavor of good ol’ fashioned garlicky mashed potatoes without all the carbs that come with them. And although I don’t eat low carb, I sure can appreciate a delicious vegetable side dish!

Especially when cauliflower has so many health benefits. Just a cup of the stuff has 73% of the recommended daily value of vitamin C! And with cold season coming around in full swing, you need to get as much of the stuff as you can!

Best of all? You probably have all the ingredients to make this at home. It’s one of my favorite last-minute side dishes, and pairs perfectly with any leftovers in your fridge!

Garlic Parmesan Mashed Cauliflower

A gluten free, grain free, low carb side that’s sure to satisfy in 20 minutes or less.

Ingredients

  • 16 ounces frozen cauliflower florets
  • 2 Tbsp unsalted butter
  • 1/4 onion diced
  • 1 tsp minced garlic
  • 1/2 cup grated parmesan*
  • 2 Tbsp unsweetened original almond milk add more as needed
  • salt & pepper to taste

Instructions

  1. Heat butter in a pan over medium to medium-high heat until melted.

  2. Once sizzling, add the onion and garlic to the pan and stir until everything is coated in butter. Let cook until the garlic is toasted and the onion is translucent, about 10 minutes.

  3. While the onion and garlic cook, empty the bag of cauliflower into a microwave-safe bowl and follow instructions for preparing. For me, that meant adding a Tbsp of water, covering with plastic wrap, and microwaving for 6 minutes.

  4. When the onions, garlic, and cauliflower are finished cooking, dump all three into a LARGE bowl and top with parmesan cheese, almond milk, salt, and pepper. Using a potato masher (or a pastry blender), mash everything together until combined, adding almond milk to consistency as needed.

Recipe Notes

* In all honesty, I dumped a handful of cheese into the bowl each time I made this, so feel free to adjust/add cheese as needed.
