A gluten free, grain free, low carb side that's sure to satisfy in 20 minutes or less.
Heat butter in a pan over medium to medium-high heat until melted.
Once sizzling, add the onion and garlic to the pan and stir until everything is coated in butter. Let cook until the garlic is toasted and the onion is translucent, about 10 minutes.
While the onion and garlic cook, empty the bag of cauliflower into a microwave-safe bowl and follow instructions for preparing. For me, that meant adding a Tbsp of water, covering with plastic wrap, and microwaving for 6 minutes.
When the onions, garlic, and cauliflower are finished cooking, dump all three into a LARGE bowl and top with parmesan cheese, almond milk, salt, and pepper. Using a potato masher (or a pastry blender), mash everything together until combined, adding almond milk to consistency as needed.
* In all honesty, I dumped a handful of cheese into the bowl each time I made this, so feel free to adjust/add cheese as needed.
