These Beef Liver Unstuffed Cabbage Bowls are gluten-free, dairy-free, paleo-friendly, and are a tasty way to get all the health benefits of organ meats.

Before you say anything, hear me out.

Liver may not be everyone’s favorite thing to eat, but that doesn’t mean that you should avoid it like the plague.

And that also doesn’t mean that you have to choke back big pieces of the stuff to get the health benefits from it that you’re craving.

I know that different foods are constantly being marketed to you as “the key” to finally achieving good health. I even wrote a whole post about health food buzzwords — and how they’re often just bs marketing.

But liver is a totally different story.

I’ve been reading a lot about the health benefits of eating liver recently. And I definitely think that it’s something that everyone should try and include in their diet.

Liver is super high in protein. It’s going to help you build healthy muscles & keep your hormones running smoothly. It’s also packed full of vitamin B12 — which is one of the most common vitamins that humans are deficient in. If you suffer from strange mood changes, brain fog, or intense fatigue, you may need more of this essential nutrient.

Lastly, liver contains high amounts of iron — I’m talking 6.2 mg of the stuff per serving, which ends up being about 34% of your daily value. A piece of chicken the same weight only gives you 1 mg of iron, or about 6%.

Liver is the clear winner here.

I mixed the liver with grass-fed ground beef from Thousand Hills Lifetime Grazed. (If you want to order from them, use PK10 at checkout to get 10% off your order!) This way, I get all the health benefits while masking the “icky” taste that everyone’s afraid of. This recipe calls for a 1:1 beef to liver ratio. But if you’re new to organ meats, you may want to adjust.

If these Unstuffed Cabbage Bowls are your first time using organ meat, I recommend doing 3/4 pound of ground beef and 1/4 pound of chopped liver. You can always work your way up when you make it for meal prep again!

Unstuffed Cabbage Bowls

Ingredients

  • 1/2 lb ground beef*
  • 1/2 lb beef liver, chopped*
  • 2 tsp minced garlic
  • 1 yellow onion, diced
  • 1 cup cooked jasmine rice**
  • 1, 15 oz can of tomato sauce
  • 1, 28 oz can of diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 Tbsp red wine vinegar
  • sea salt to taste
  • 1 lb shredded green cabbage

Instructions

  1. Heat a large pot on the stove over medium-high heat.

  2. Add in your ground beef and chopped liver pieces and a pinch of salt. Mix frequently until browned.

  3. Add in your garlic, onion, cooked rice, tomato sauce, diced tomatoes, smoked paprika, oregano, red wine vinegar, and another pinch of sea salt. Mix together & cover. Cook until onion is tender, about 15 minutes.

  4. Add in the cabbage, stir, cover and cook until cabbage is tender and cooked down, about 15 minutes.

  5. Divide into meal prep containers and heat up when you need a bite!
