These chicken poppers are paleo, egg-free, and gluten-free, and the best part is, they’re way more delicious than chicken nuggets!
I’m all about a good chicken nugget, but sometimes you just need a bit more flavor.
Over the last few months, I’ve been experimenting with different chicken popper recipes. My favorite has to be the Bacon Ranch Chicken Poppers from Unbound Wellness — Michelle really knows her stuff!
And since I always seem to have just a little bit of Thai red curry paste leftover in the fridge, I figured why not try and make my own variation!
These bad boys are packed full of flavor and nutrients. They’re made with shredded carrots and avocado oil and are insanely easy to make.
So now when you’re eating them, you’re getting some veggies, healthy fat, protein, and some pretty amazing flavor all inside one little convenient package. That’s a win in my book!
Can you use turkey instead?
Yup! Ground turkey would be a great substitute to put in these poppers.
Can you use pre-shredded carrots?
I’d recommend shredding your own, either with a box grater or with a few pulses in the food processor. They’ll be finer and retain more moisture this way, which is good!
Can I use a different flour or oil?
Cassava flour or almond flour could work as paleo substitutes, though you may need to increase the amount by 1 Tbsp since coconut flour is more absorbent.
You can use olive oil in a pinch, but I wouldn’t recommend using coconut oil unless you bring your chicken to room temperature first. It could solidify if it gets too cold, and nobody wants chunks of coconut oil.

Thai Red Curry Chicken Poppers
Ingredients
- 1 pound ground chicken
- 8 oz grated carrots
- 2 sprigs green onion, chopped
- 2 Tbsp avocado oil
- 2 Tbsp coconut flour
- 1/2 tsp ginger powder
- 2 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 Tbsp Thai red curry paste
Instructions

Preheat your oven to 400F and line a baking sheet with parchment paper.

Use a large mixing bowl to combine all of the above ingredients. Mix to combine, but be sure to not overmix (overmixing means tough poppers!).

Roll your mixture into small poppers and place them on the cooking sheet. You'll get between 20 and 25.

Place in the oven and bake for 28 minutes. Turn to broiler if desired, 1-2 more minutes.

Serve alongside some rice and kale like I did, or enjoy them on their own!
These are DELICIOUS !! Super flavorful, very satisfying! I enjoyed them alongside some sautéed veggies and some homemade curry sauce (curry paste + coconut milk). Will DEFINITELY be making again.
