Is there really anything better than having breakfast for dinner?
I really don’t think so.
Brinner meals check all of the boxes for me when it comes to food. They’re simple, they’re cheap, and they taste out of this world amazing even when you reheat them the next day.
Case in point: this Easy Sausage & Kale Frittata that I’ve been having for dinner for the last few nights.
This frittata has plenty of juicy sausage and tender kale, which happen to be the only ingredients I needed to go out and buy to make this recipe. The rest of the stuff I already had in my fridge. Aren’t pantry staple recipes the bomb?
I used a great combination of spices and a hefty handful of grated Parmesan to really pump up the flavors, but you could really spice this frittata however your heart desires. You also could mix up the type of sausage you use. I chose some green onion uncased links for this one, but use whatever sounds right to you!
And when it comes to the cooking part of this recipe, it’s a no brainer. You only need to have a skillet and a giant mixing bowl to put it all together. After all, you need to whisk together 10 large eggs!
The frittata would also pair perfectly with some homemade hash browns like the ones I show below, or with a sweeter side. Check out my Paleo Gingerbread Muffins. I think they’d be a great fit!

Easy Sausage & Kale Frittata
This Sausage & Kale Frittata is the breakfast for dinner of your dreams. Whip it up the next time you need a Clean Out the Fridge Friday meal!
Ingredients
- 1 Tbsp butter
- 12 oz sausage either ground or uncased links
- 10 oz chopped kale I used Trader Joe's Organic Tuscan Kale
- 1 tsp minced garlic
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 tsp crushed red pepper flakes
- 1 tsp Trader Joe's Umami Seasoning optional but very yum
- 10 large eggs
- 1 cup grated Parmesan cheese divided
- minced fresh parsley for garnish
Instructions

Preheat the oven to 350F.

Heat a 12 inch cast-iron skillet over medium high heat. Once hot, add in butter and sausage. Break up the sausage into small pieces as it browns.

When the sausage is browned, remove it from the pan and add the kale. Stir until wilted, and then add in the garlic. Cook for 30 seconds and then add the sausage back into the skillet and top with the spice mixture. Turn off the burner.

Lightly beat the eggs and 3/4 cup of the Parmesan cheese together in a large bowl. Pour the mixture evenly over the kale and sausage in the skillet and sprinkle the remaining Parmesan on top.

Bake for 20-22 minutes or until the eggs are set and there's a nice browning on top. Sprinkle with parsley and serve alongside some homemade hashbrowns!
