Let’s make some protein waffles for breakfast!

I know that people say that breakfast is the most important meal of the day. That isn’t necessarily true, but that doesn’t mean that you should skimp out on your breakfast!

By packing your breakfast full of healthy proteins and fats, you’ll stay more satiated and less HANGRY throughout your day. I can’t say the same for all of the sugar-packed box mixes out there.

Another bonus for this recipe? It’s single serving. If you’re making waffles for more than one, just double all the ingredients and be sure to fill your waffle maker in two batches.

I love starting out my day with a plate like this — protein-packed waffles, some frozen berries for sweetness, nut butter for extra fat, and a sprinkle of pepitas for crunch!

And I always make sure to use high quality protein when I choose to use protein powders – specifically Organifi’s Delicious Vanilla Protein. It’s vegan, gluten-free, soy-free, and organic – you can’t ask for more than that! They even include a digestive enzyme blend to make sure your gut loves it, too.

And the best part? It tastes good. Not chalky and gross like other protein powders on the market.

Whip up a batch of these protein waffles the next time you’re craving something sweet for breakfast! I promise you won’t regret it.

Ingredients

Dry

  • 15 g Organifi Vanilla Protein Powder (~2 Tbsp) & (use code IPW15 for a discount!)
  • 15 g coconut flour (~2 Tbsp)
  • 1/2 tsp baking powder
  • 1 Tbsp unsweetened cocoa powder OR cinnamon (I've made both and LOVE them)
  • 1/2 tsp ground ginger
  • 1/4 tsp sea salt

Wet

  • 2 eggs
  • 1 tsp vanilla extract
  • 3 Tbsp almond or coconut milk*

Instructions

  1. Preheat your waffle iron and spray with coconut oil.

  2. Mix the dry ingredients together in a small bowl and the wet ingredients together in a medium bowl.

  3. Add the dry into the wet and stir until combined. It will seem like they won't combine at first, but I promise they will!

  4. Pour the batter into your waffle iron and close.

  5. Waffles will be done when steam quits coming out the sides of the maker.

  6. Top with frozen berries, a drizzle of nut butter, and some pepitas if you're feeling fancy!

Recipe Notes

* If you don’t have a waffle maker, add another 1 or 2 Tbsp of milk until the batter is thin enough to make pancakes instead!
