Protein Waffles That You'll Actually Want to Eat

Ingredients

Dry

  • 15 g Organifi Vanilla Protein Powder (~2 Tbsp) & (use code IPW15 for a discount!)
  • 15 g coconut flour (~2 Tbsp)
  • 1/2 tsp baking powder
  • 1 Tbsp unsweetened cocoa powder OR cinnamon (I've made both and LOVE them)
  • 1/2 tsp ground ginger
  • 1/4 tsp sea salt

Wet

  • 2 eggs
  • 1 tsp vanilla extract
  • 3 Tbsp almond or coconut milk*

Instructions

  1. Preheat your waffle iron and spray with coconut oil.

  2. Mix the dry ingredients together in a small bowl and the wet ingredients together in a medium bowl.

  3. Add the dry into the wet and stir until combined. It will seem like they won't combine at first, but I promise they will!

  4. Pour the batter into your waffle iron and close.

  5. Waffles will be done when steam quits coming out the sides of the maker.

  6. Top with frozen berries, a drizzle of nut butter, and some pepitas if you're feeling fancy!

Recipe Notes

* If you don't have a waffle maker, add another 1 or 2 Tbsp of milk until the batter is thin enough to make pancakes instead!
