These Grain-Free Parmesan Turmeric Waffles prove that not all breakfast foods have to be sweet. Serve with some melty butter and a sprinkle of salt!

I’m usually a sweet breakfast type of person, which is why there are so many muffin recipes floating around here. But that doesn’t stop me from dabbling in the savory from time to time.

That being said, I do admit that Jordan and I made this plate as dinner, not breakfast. Just because something is a waffle doesn’t mean that you have to eat it in the morning. Get out there and break those food rules!

I know that there are so many people (including me) avoiding unnecessary gluten in their diets. Because of that, I made this waffle recipe gluten-free! Creating a grain-free waffle may sound like a challenge, but it was actually super simple!

I used Otto’s Naturals Cassava Flour in place of the usual all purpose flour in my waffle recipe and added a TON of flavor with spices. I’m talking turmeric, garlic powder, ancho chili, the works!

And because they’re Parmesan Turmeric Waffles, you know that there was a hefty dose of Parmesan cheese added, too!

To turn this plate into a meal, I roasted up some organic chicken drumsticks and asparagus in the oven at 425 degrees F. Coat your drumsticks and asparagus in whatever suits your fancy. I added olive oil and similar spices to the waffles!

Roast the chicken on a wire rack for 20 minutes, flip, and then return for 20 more minutes. Stick the asparagus in for the second 20 minutes, whip up your waffles, and you’ve got yourself a meal!

It’s really that easy to make something healthy and gluten- and grain-free!

Grain-Free Parmesan Turmeric Waffles

Ingredients

Dry

  • 1 3/4 cups cassava flour (I used Otto's Naturals)
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 2 Tbsp grated Parmesan cheese
  • 2 tsp dried thyme
  • 1 tsp ground turmeric
  • 1 tsp ancho chili powder optional

Wet

  • 1 3/4 cups milk (I used unsweetened almond milk)
  • 2 large eggs
  • 1/2 cup melted butter

Instructions

  1. Set up your waffle iron and preheat according to manufacturer's instructions. I like to place a paper towel underneath mine, too, to help catch the drippings!

  2. Whisk the cassava flour, baking powder, Parmesan, and spices together in a medium bowl.

  3. In another (larger) bowl, beat the milk, eggs, and melted butter together until frothy.

  4. Add your dry ingredients into the wet ingredients and stir until just combined. Let sit for 5 minutes before continuing.

  5. Pour or ladle enough batter to cover the surface of your waffle iron and close the top. Cook until the waffle iron lets you know that your batch is done. (If you iron doesn't have an indicator light, wait until the steam has stopped coming out of the sides before you check for doneness!)

  6. Remove the waffles and repeat with remaining batter. You should have about 8 waffles at the end, depending on the size of your iron!
