Grain-Free Parmesan Turmeric Waffles

Ingredients

Dry

  • 1 3/4 cups cassava flour (I used Otto's Naturals)
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 2 Tbsp grated Parmesan cheese
  • 2 tsp dried thyme
  • 1 tsp ground turmeric
  • 1 tsp ancho chili powder optional

Wet

  • 1 3/4 cups milk (I used unsweetened almond milk)
  • 2 large eggs
  • 1/2 cup melted butter

Instructions

  1. Set up your waffle iron and preheat according to manufacturer's instructions. I like to place a paper towel underneath mine, too, to help catch the drippings!

  2. Whisk the cassava flour, baking powder, Parmesan, and spices together in a medium bowl.

  3. In another (larger) bowl, beat the milk, eggs, and melted butter together until frothy.

  4. Add your dry ingredients into the wet ingredients and stir until just combined. Let sit for 5 minutes before continuing.

  5. Pour or ladle enough batter to cover the surface of your waffle iron and close the top. Cook until the waffle iron lets you know that your batch is done. (If you iron doesn't have an indicator light, wait until the steam has stopped coming out of the sides before you check for doneness!)

  6. Remove the waffles and repeat with remaining batter. You should have about 8 waffles at the end, depending on the size of your iron!
