Searching for a delicious, warming, gluten-free & vegan breakfast? This is the recipe for you. My Gluten-Free Fauxtmeal recipe has been keeping me full and focused until lunch all winter. And I know I’m going to keep it in my rotation long after the frost thaws.

I know that oatmeal is the usual go-to for a warming breakfast, but it just wasn’t satisfying enough to me. That’s because when you eat something high in carbohydrates, it spikes your blood sugar sky high. This causes your body to release insulin to absorb that sugar.

When all of that sugar is absorbed into your cells via insulin, your blood sugar drops. Your body is left without any quick energy. This can make you feel tired, irritable, and hungry, often only an hour or two after your meal.

I know the importance of starting off the day with a meal packed full of protein, fat, and fiber to help energize you and keep you satisfied until lunch. That’s where fauxtmeal comes in! And as an added bonus, people who eat bigger breakfasts tend to overeat less later in the day and have better weight control overall. Breakfast really is the most important meal of the day!

Easy Cozy Fauxtmeal

Ingredients

In the pot

  • 1 cup unsweetened full-fat coconut milk
  • 3 Tbsp chia seeds
  • 1 Tbsp hemp seeds
  • 3/4 cup frozen cauliflower rice

In the serving bowl

  • 15-20 g Organifi Vanilla Protein (IPW15 for discount!)
  • 1 tsp cinnamon
  • 1 pinch Redmond Real Salt

Mix-ins

  • 1 Tbsp peanut butter (or nut butter of your choice)
  • frozen berries for topping
  • pumpkin seeds for topping

Instructions

  1. To make, mix the first group of ingredients in a small pot on the stove over medium heat. In a serving bowl, mix together your protein powder, cinnamon, and salt.

  2. Once the mixture on the stove thickens, dump it into the serving bowl and stir to combine. Swirl in your peanut butter, then top with frozen berries and pumpkin seeds.
