Thai Red Curry Chicken Poppers

Ingredients

  • 1 pound ground chicken
  • 8 oz grated carrots
  • 2 sprigs green onion, chopped
  • 2 Tbsp avocado oil
  • 2 Tbsp coconut flour
  • 1/2 tsp ginger powder
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 Tbsp Thai red curry paste

Instructions

  1. Preheat your oven to 400F and line a baking sheet with parchment paper.

  2. Use a large mixing bowl to combine all of the above ingredients. Mix to combine, but be sure to not overmix (overmixing means tough poppers!).

  3. Roll your mixture into small poppers and place them on the cooking sheet. You'll get between 20 and 25.

  4. Place in the oven and bake for 28 minutes. Turn to broiler if desired, 1-2 more minutes.

  5. Serve alongside some rice and kale like I did, or enjoy them on their own!
